Healthy cookies from More with Less Cookbook

Combine in saucepan:

1 c raisins
1/2 c chopped dates
1 c water

Boil 3 minutes, stirring. Cool.


2 eggs
1/2 c margarine
3 tsp honey or agave syrup
1 tsp vanilla

Sift together:

1/4 tsp cinnamon
1 c flour
1 tsp soda

Mix dry mix, creamed mix and date mix together alternately. Stir well. Drop teaspoonfuls on cookie sheet. Bake at 350 F for 10-12 minutes.

I add sunflower seeds, pumpkin seeds, nuts etc, anything I like. I have also switched the raisins for cranberries and also used 1/2 c raisins and 1 c dates in the date mixture.
