Tonight I made up a pasta dish.

Cook tortellini (I used cheese tortellini). While that is going on, fry up a hatch pepper, chopped (any green pepper will do or any color for that matter). Add a cup of halved grape tomatoes, I used yellow ones. When veggies are nice and soft, add two tbsp cream cheese, I used whipped. Add a little balsamic vinegar or glaze, about a tsp. Season with salt and pepper. Add some pasta water to make it all saucy.

Drain tortellini and add to the sauce. Serve with grated parmesan cheese. This meal takes about ten minutes to prepare.
