Donquila

Don’s new favorite drink which is inspired by the Tequila sunrise.

Cut half a lime in wedges and muddle in bottom of a Collins glass (tall glass). Add 1 oz Patron Citronge (or other orange liqueur) and 1 1/2 oz Tequila. Fill glass with ice, add orange juice until glass is full. Stir. Add a tiny bit of grenadine, just to color the very bottom. Do not stir again!

Caipirinha

Caipirinha

This is my new favorite drink, soooo good and so simple. This is the recipe from the bottle (tip, recipes on product labels are usually great!).
Cut ends off a lime, cut into pieces and muddle in bottom of tumbler with 2 tbsp cane sugar (I use the raw, brown kind). Add 1 1/2 oz of Cachaca (or more) and plenty of ice and stir. Easy as pie. I used Ypioca brand Cachaca. I have also added mint. Yum!

Valentine’s cocktail

Nice, pink cocktail, perfect for Valentine’s day.

Puree frozen strawberries. Spoon a good tablespoon into a martini glass. Add a tablespoon of strawberry vodka (I make my own, add frozen strawberries to vodka and let steep for a week). Add sparkling white wine. Instead of ice, drop a couple of frozen strawberries in each glass.

Limonita (a twist on the Margarita)

1 1/2 oz tequila

1/2 oz Patron Citronge (or any type of orange liqueur)

A small glugg of Limoncello (or a dash if you will)

Juice of one lemon

Shake and pour over ice. If you find it too sour (I personally love sour), add a squeeze of agave syrup or simple syrup.

Ginger-Lingonberry Martini

This is my new favorite drink; so simple and so tasty.

2 oz ginger-infused vodka (fresh ginger in vodka for at least a week)

1 oz lingonberry juice conc. (buy at IKEA) Would probably work with cranberry or pomegranate syrup, Monin is a good brand.

Shake and pour over ice into martini glass. I will add some fresh basil or mint next time, tarragon would work too.

Chicken Ciabatta

You will need:

Ciabatta bread, 1 pkg frozen spinach (1 lb), 2 chicken breasts, garlic, oil, grated cheese.

I am cleaning out the freezer and created a meal using stuff I had on hand.

Take a loaf of semi-stale ciabatta bread and slice, use 2-3 slices per person. Brush with olive oil and spread some garlic on top of it, pressed or chopped.

In a pan thaw  spinach on low heat and make sure all the water is gone. I added some garlic and salt and pepper to the spinach.

Spread spinach on top of bread slices. (Variation: add sun-dried tomatoes if you like them).  Sprinkle grated cheese on each slice, I used sharp cheddar and jack, use what you have in the house. Top with thin slices of grilled chicken. You can buy it ready-made, a whole grilled chicken or just grill chicken breasts and slice them up. I marinated the  chicken breast briefly in oil and balsamic vinegar, then sesoned with garlic/herb mix. I used two chicken breasts for seven slices of bread.

Last, sprinkle grated parmesan on top and broil on the lower setting in the oven. The bread turned nice and crispy. The family really liked it. We had a simple chick pea salad with it (chick peas with salsa and lime).

Iced Teani

A refreshing drink for summer

1 oz black tea
2 oz peach vodka (infuse vodka with sliced, fresh peaches)
1 squeeze agave syrup

Shake and pour over ice in martini glass.

So easy, so tasty.
